"UNDR12" is a project that breathes life into surplus vegetables and revitalizes the community through a dried waste vegetable initiative.
All the vegetables used are harvested from the area surrounding our base, with a constant selection of 5 to 6 types, along with other seasonal and regionally distinctive vegetables being dried.
By processing all vegetables to have a free moisture content of 12% or less (water activity of 0.15 or less), we prevent spoilage and halt the growth of microorganisms without using additives.
